Now that it’s getting warm, I have to be on my grill at least a few nights a week. It’s pretty much mandatory. And with all these burgers, chicken breasts, and veggies I’m grilling, I needed something to spice up my repertoire. This Apple & Shallot Balsamic Compote does the trick–just right!
Simmering apple and shallots in balsamic gives you the perfect amount of natural sweetness, and is great paired with grilled protein like chicken, beef or turkey burgers, and even sausage. Fresh thyme brings a richness of flavor without overpowering those sweet notes.
Not only is it delicious–it’s super easy and will take less than 10 minutes to make. The other day I planned to have typical turkey burgers with tomatoes and onions. I remembered this compote, grabbed one of the many apples in my fridge, topped the burger with some brie cheese, and it quickly turned into something gourmet!
Whip up this compote in minutes, and go from simple to gourmet, too!
Serves 4
– 1 Tbs. butter
– 5 medium shallots, sliced thin
– 1 large red apple (or 2 small), sliced thin and cut into bite-size pieces
– 2 Tbs. balsamic vinegar
– 1 Tbs. sugar, plus more to taste
– 1 tsp. minced fresh thyme
Heat the butter in a small skillet over medium-low heat. Add the shallots, apples, vinegar, sugar, and thyme and stir to combine. Once the apples and shallots begin to soften, about 2 minutes, add a tsp. of water (and more if need be) to sustain moistness and continue to stir. The balsamic should reduce, becoming a bit thicker, and the apples should break down also releasing liquid. Continue to stir until apples are completely soft and you no longer have runny liquid.
